This lot of high grown Heirloom varietals from the renowned Sidama region are processed at the Alemu Adama wet and dry mill station where sustainability and social welfare are key priorities with training provided on deforestation, protecting water sources, waste management, and labour practices. Support is provided to low-income households for health insurance and the Mill contributes to many local community initiatives such as funding road construction and enhancing spring water resources and plans to invest further by replacing their current machinery with eco-friendly processing machines designed to minimise water and energy consumption.
Lala Salama translates from Swahili as ‘sleep well’, surely the most charming way to describe a decafiniated coffee. In more technical terms the ‘Co2’, ‘Swiss Water’ or ‘Sparkling Water’ method to decaffeinate coffee beans is a gentle, natural and organically certified process where the green coffee is immersed in tanks of water and carbon dioxide to draw out the mobile caffeine molecules without removing the natural compounds that attribute to flavour and aroma.
The results are a coffee that is incredibly low in caffeine while retaining all of the complexity that high grown Ethiopian coffee is renowned for.
