The Producer
Los Naranjos Coffee are a group of producers in the Apaneca region of El Salvador founded by high school friends who now operate several farms together. This exceptional lot is from Finca Ethiopia, named to honour the origins of the coffee grown there.
Situated just behind the Llamatepec Volcano, where the soil is rich in minerals ideal for growing these crops, the property was abandoned for a long time and was renovated by the group in 2018. Despite being a farm with 34.5 hectares the owners decided to conserve the natural forest so only 13 hectares are now cultivated with coffee, the rest is managed to preserve the native flora and fauna.
The Process
Anaerobic Fermentation is an experimental, extended natural processing that stands out for it’s meticulous quality control. This approach can often result in ‘punchy’ upfront flavour profiles and a very clean cup.
The extended fermentation requires careful and constant monitoring of temperature, PH and sugar levels measured over several days to ensure the perfect balance is achieved and the coffee does not sour and over ferment. After this the cherries are moved to raised drying beds at a lower elevation allowing for a longer, more homogeneous drying period (aprox. 30 days) that supports a cleaner cup and increased stability of the beans in storage.
The Profile
Exceptional clarity in the cup. A mild acidity with upfront fruit flavours that may surprise those new to Anaerobic Ferments. Exquisite as a filter or drip brew.
Geisha is a rare varietal originating in Ethiopia with a relatively recent history of cultivation in El Salvador, the masterful processing of this lot has resulted in a very special Micro Lot that we have taken great care with to preserve the unique natural characteristics of the beans, their origin and the skill of those who cultivate it.
We taste: fresh Mango and mellow tangy Passion Fruit.
